help needed

It's finally Friday, it's been a busy week and I found out yesterday afternoon my kids are off from school today. If I don't write stuff down I forget things. I guess I can blame this on my 3 pregnancies (do brain cells ever come back?). Maybe I should put some on my Christmas wishlist ;)

Anyway, no reviews or giveaways today. It's going to be cleaning the house (with the music really loud), sorting out washing, going to the playground, dropping Lisa off at swimming and going to Taekwondo with Jamie. At least it's not just me cleaning, the kids are going to help, makes it way more fun!

Oh talking about sorting out washing, a couple of days ago Lisa (she's 11) got up in the morning, got herself ready for school and decided to fold some of her washing and putting it away in her room! I came down that morning and she told me, I hadn't asked her to do this, she just did it by herself to help me out! I love that girl, she's a trooper.


OK, now for the "help needed" part. As you know (and if you don't, then now you do) both my husband and myself are on a diet (using Sensa to help us). We're eating less, are drinking way more water and eating way more veggies and that's where I need your help.
I need some inspiration in the veggie area. We've done salad, roasted vegetables and I love them but I'm sure there's more recipes out there we can try.
So this is where I need YOU.
Could you tell me names of cooking books that only do vegetables or have you got any recipes you want to share?

My favorite is cucumber salad. Pasta with sone dressing and a ton of veggies. If you google it and just puch the first link that comes up there is one of many different variations of it.

No Fry French Fries:
peal and slice potato into 1/4" sticks. Spray Pam or other spray oil on cookie sheet and then spray pam on the potatoes. Season to taste. Bake in preheated oven for 30-40 minutes at 400 degrees. Turn potatoes every 15 minutes until crisp.

Another oven potato fry:
Wash potato and slice into wedges. No need to peel. Toss 1 capful of Mrs. Dash extra spicy with potato wedges, olive oil and garlic. Bake at 400 degrees in preheated oven for 20 minutes. Turn potatoes and bake for 15 minutes more

Tomato Caprese Salad:

Sliced Tomatoes (any kind, but a mix of yellow and red is gorgeous)

Soft Mozzarella (reduced fat is fine)

Black olives (sliced thin)

Croutons (optional)

Dill Weed

Italian Dressing (no fat, reduced calorie)

Layer tomatoes, mozzarella and olives in a pan, sprinkle with dill weed and dressing, and enjoy


A Diet Center recipe I enjoy (it sounds odd, but tastes yummy) is zucchini - shredded (about a pound), eggs (1-2),crumbled soda crackers and a can of well-drained tuna. Mix together, throw in a casserole and bake @ 350 for 45 minutes.
